Recipe of vegetable soups

Pumpkin Soup

Pumpkin is rich source of anti-oxidant, fiber, potassium , many essential minerals and vitamins. It has alkaline properties which helps in improving your digestive system and keeps the acid reflux at bay.

Ingredients

Pumpkin  – 2 bowl

Tomatoes   – 3 piece

Carrot – 2 piece

Grated ginger  – 1 spoon

Garlic pods  –  3-4

Cloves – 2

Cinnamon small stick

Black Pepper   3-4

Salt to taste

Method

  • Wash and peel all the vegetables and cut them small. 
  • Put all the above ingredients in the pressure cooker along, with 1 glass of water.
  • Take 2 to 3 whistles, let it get cooled completely. Now, put these vegetable with water in mixer and churn it to smooth paste.
  • Strain it by strainer; add 1 more glass of water. Now boil the soup for 2-3 mins. Serve it hot with bread crumbs.   

Drum Stick Soup

Drum stick ( sehjan ki phali in Hindi) is a good source of anti-oxidants, minerals and vitamins required for improving the immunity of the system and keep the diseases far away from you. This soup is completely boost the immunity and helps in restoring gut health.

Ingredients:

Drum Sticks – 3

Tomatoes – 3

Grated ginger  – 1 spoon

Garlic pods  –  3-4

Cloves – 2

Cinnamon small stick

Black Pepper   3-4

Method:

  • Cut the drum sticks into 3-4 pieces and then cut tomatoes. Boil the drum stick and take out its pulp. 
  • Pressure cook remaining ingredients together. Take 2 to 3 whistles, cool them completely.
  • Now, put these vegetables(along with drum stick pulp) with water in mixer and churn it to smooth paste.
  • Strain it by strainer; add 1 more glass of water. Now boil the soup for 2-3 mins. Serve it hot. It can be stored for 2-3 days.

Lentil Soup/ Peas Soup

Lentil soup is a protein rich soup and another way of having the proteins in your diet. This form of proteins are very easy on the gut and causes no side effects.

Ingredients:

Moong dal/ Peas – ½ cup

Tomatoes – 3

Carrot -2

Grated ginger  – 1 spoon

Garlic pods  –  3-4

Cloves – 2

Cinnamon small stick

Method:

  • Lentil soup is rich in proteins. Wash and peel all the vegetables and cut them small.

Spinach/ Beetroot Soup

Like the green vegetables being the good source of iron and other nutrients, spinach soup is always serving the same purpose and has good amount of iron in it. Best to be served to the people who are suffering from anemia.

Ingredients:

Spinach- 2 bowl or beetroot – ½ piece

Tomatoes – 3

Carrot -2

Grated ginger  – 1 spoon

Garlic pods  –  3-4

Cloves – 2

Cinnamon small stick

Method:

  • Wash and cut all the vegetables. Put all the above ingredients in the pressure cooker along, with 1 glass of water.
  • Take 2 to 3 whistles, let it get cooled completely. Now, put these vegetable with water in mixer and churn it to smooth paste.
  • Strain it by strainer; add 1 more glass of water. Now boil the soup for 2-3 mins. Serve it hot with bread crumbs
